PLANT POWER: Quinoa – mother of all grains

-- Known to the Incas as the “mother of all grains”, Quinoa is hard to beat for nutritional richness.
One of only a few plant foods considered a complete protein, Quinoa contains all nine essential amino acids, making it a great dietary choice for vegetarians and vegans.
Quinoa is also full of fibre (5 grams per 3/4 cooked cup) and provides 180 milligrams of omega-3s (in the form of alpha-linolenic acid) per 3/4 cooked cup. It’s also a good source of minerals – including zinc, copper, magnesium, and phosphorus – and provides nearly 3 milligrams of iron per 3/4 cooked cup, putting it ahead of a 4-ounce serving of red meat.
Among antioxidant-related minerals, quinoa is richest in manganese, with one cooked cup containing almost one-third of the recommended daily allowance of manganese (essential for development, metabolism, and the antioxidant system).
